Caper & Anchovy Sauce

This is a great sauce for fish but can be I am sure a foodie can find other uses for it.

1 tsp finely chopped garlic
3 flat anchovy fillets, finely chopped
2 tbs finely chopped capers
1/4 cup fresh lemon juice
1/3 cup extra-virgin olive oil
1 tsp mustard (your choice)
salt and pepper to taste

Combine garlic, anchovies, and capers with lemon juice, oil and mustard.  Season with salt & pepper and beat with fork.  That was easy.
